Corn Beef Hash & Egg Tacos

  • 4 Small Flour Tortillas
  • 3 Medium Spuds
  • 1 Cup of Cooked Corn beef
  • 1 Medium Diced Onion
  • 4 Tbsp. Butter
  • Pinch of Salt
  • Pinch of Pepper
  • 4 Eggs
  • ¼ Cup of Water
  • Chives


  1. In a large frying pan add 4 Tbsp. of Butter, the diced potatoes.  Sprinkle the salt and pepper and cook on medium high until ½ done.
  2. Add the diced onion and the cooked Corn beef which you have cut up and cook until are tender.  In a bowl beat the eggs, add milk, pepper and salt.
  3. Cook your eggs in another frying pan and scramble until cooked.  
  4. Warm up your tortillas and place a large spoon of the corn beef hash and a spoon of the scramble eggs. Top with some chives and enjoy.
