Ingredients
- 4 Small Flour Tortillas
- 3 Medium Spuds
- 1 Cup of Cooked Corn beef
- 1 Medium Diced Onion
- 4 Tbsp. Butter
- Pinch of Salt
- Pinch of Pepper
- 4 Eggs
- ¼ Cup of Water
- Chives
Directions
- In a large frying pan add 4 Tbsp. of Butter, the diced potatoes.  Sprinkle the salt and pepper and cook on medium high until ½ done.
- Add the diced onion and the cooked Corn beef which you have cut up and cook until are tender. Ā In a bowl beat the eggs, add milk, pepper and salt.
- Cook your eggs in another frying pan and scramble until cooked. Ā
- Warm up your tortillas and place a large spoon of the corn beef hash and a spoon of the scramble eggs. Top with some chives and enjoy.
