Mini Meatball Soup

  • 1 lbs. of Ground Turkey
  • ¼ cup of Italian Bread Crumbs
  • 1 Egg
  • 4 Cups of Fresh Spinach
  • 1 Cup of Mini Tomatoes
  • 4 Cups of Mini Salad Macaroni Noodles
  • 1 Tsp. Pepper
  • 1 Tsp. Salt
  • 4 Cups of Beef Stock
  • 2 Cups of Water
  • ¼ Cup of Sliced Parmesan Cheese


  1. Mini Meat Balls:In a large mixing bowl add your ground turkey meat, egg and Italian Bread Crumbs and combine mixture.  Make ½” Meatballs and place them on a place to cook. In a pot bring to boil 2 cups of the beef stock and add the mini meatball until they are cooked they will float.  When all the Mini Meat Balls are cooked add to the pot with the noodles.
  2. Cook your Mini Macaroni Noodles. Once they are done cooking make sure to rinse off with warm water and add to a large soup pot.  Add the 2 Cups of water and 2 Cups of the Beef Broth to the pot with the noodles.  Also, add the cooked broth you used for the meat balls to the pot.  
  3. Bring to boil and add the tomatoes, spinach, pepper and salt. Cook for 15 Minutes and turn to rest.  Serve Soup in a bowl and top with Slice Parmesan Cheese.
