The Muffin with a tart and citrus flavor.

Makes 12 muffins.

  • 2 Cups of Flour
  • 3 Tsp. Baking Powder
  • ½ Salt
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1/3 Cup Canola Oil
  • 1 Tsp. Vanilla
  • 6 Tbsp. of Orange Juice
  • 1 Cup of Fresh Cranberries
  • 1 Tbs. Flour.
  • Zest from 2 Oranges


Warm Oven to 350 degrees.  Use a 12 cup cake pan and line with your favorite Cupcake liners or spray with Non-Stick Spray.  In a mixing bowl add your sugar, eggs, oil, vanilla, and 6 Tbsp. of the Squeeze Juice from your Oranges and mix well.  Then add the Flour, salt, baking powder and the zest from the 2 oranges and mix well.  In a small bowl cut your cranberries in half and coat them with the flour well as this prevents them from staying in the mix evenly.  Add them to the mixture and fold them until mix.  Spoon the mixture in the muffin pan until all batter is used.  Sprinkle a little bit of sugar on each muffin.  Back for 20 Min or until clean with a knife.  Cool and Serve.
