Perfect Side to any Breakfast meal.

• 8 Russet Potatoes Peeled
• ½ Diced Medium White Onion
• ½ of a Pork Chorizo
• 1 Tsp. Salt
• 1 Tsp. Pepper
• 1 Stick Butter

Peel skin from potatoes cut them in half and then in quarters and then into small squares. In a large frying pan add the butter and Diced Potatoes. Season with Salt and Pepper. Fry on Medium High for about 10 minutes and then flip them over and cook for another 10 min. Stir again to make sure that they are all cooked fork tender. Add the onion and cook for another 10. Push the fried spud to one side of the frying pan then add the Pork Chorizo. Cook down the Pork Chorizo and when the pork is broken down mix the spuds together to cover with the Pork Chorizo. Cook for another good 5 Minute and then you can plate.
