For Filling:

  • 1 Cup of Fresh Squeezed Lemon Juice
  • ¼ Cup of Corn Starch
  • ½ Cup of Water
  • 1 Pack of Lemon Instant Pudding
  • 2 Cups Whole Milk
  • Zest from 1 Lemon

For Topping:

  • 1 ½ Cups Heaving Whipping Cream
  • Zest from 1 Lemon

Pie Crust: Rimmer’s Red Barn Graham Cracker Crust


  1. Make the Instant Lemon Pudding to box directions and place in refrigerator to chill.
  2. Make Graham cracker crust and place in an Pie Pan.
  3. In a small pot add your water, lemon, zest from a lemon and cornstarch to a pan and bring to boil.
  4. Make sure to keep stirring until the mixture becomes thick.  Remove from heat to chill.
  5. Take out the Lemon Pudding & pour in the Lemon mixture.
  6. Fold together the Pour the mixture into crust.
  7. In a medium mixing bowl beat the Heavy Whipping Cream until it forms peaks.
  8. Spread the Whipping Cream over the Lemon mixture
  9. Add Lemon Zest to the top.
  10. Refrigerate for 1 hour and Serve.
