Ingredients:
For Filling:
- 1 Cup of Fresh Squeezed Lemon Juice
- ¼ Cup of Corn Starch
- ½ Cup of Water
- 1 Pack of Lemon Instant Pudding
- 2 Cups Whole Milk
- Zest from 1 Lemon
For Topping:
- 1 ½ Cups Heaving Whipping Cream
- Zest from 1 Lemon
Pie Crust: Rimmer’s Red Barn Graham Cracker Crust
Instructions:
- Make the Instant Lemon Pudding to box directions and place in refrigerator to chill.
- Make Graham cracker crust and place in an Pie Pan.
- In a small pot add your water, lemon, zest from a lemon and cornstarch to a pan and bring to boil.
- Make sure to keep stirring until the mixture becomes thick. Remove from heat to chill.
- Take out the Lemon Pudding & pour in the Lemon mixture.
- Fold together the Pour the mixture into crust.
- In a medium mixing bowl beat the Heavy Whipping Cream until it forms peaks.
- Spread the Whipping Cream over the Lemon mixture
- Add Lemon Zest to the top.
- Refrigerate for 1 hour and Serve.
