Lemon Cream Dream Cookie

This is the Perfect Lemon Lemon Cookie

  • 1 Box of Lemon Cake Mix
  • 2 Eggs
  • ½ Cup of Canola Oil
  • 1 Zest from Lemon
  • 1 Tbsp of Fresh Lemon Juice

For Frosting: Lemon Frosting – Rimmer’s Red Barn.

  • 1 Cup of Butter – Room Temp
  • 5 Cups of Powder Sugar
  • ½ Tsp. Lemon Flavor
  • 2 Tbsp. Juice from a Fresh Lemon
  • 1 Lemon – Zest


  1. Preheat the oven to 350°F.
  2. Line 2 baking sheets with parchment paper or spray with non-stick spray. 
  3. In a mixing bowl add the Cake mix, Eggs, Lemon Zest, Lemon Juice and Oil and mix well.
  4. Chill Cake Mix in Refrigerator for 30 Minutes
  5. Remove the Cake mix from the Refrigerator
  6. Roll out 1” Balls and slightly flatten.
  7. Place on Baking sheets about 3 Cookies per Row. 
  8. Place in Oven and Bake for 7 – 8 Minutes or until done.
  9. Remove and place on cookie sheet to chill.
  10. Prepare the Lemon Frosting.
  11. Mix all Ingredients for Lemon Frosting and whip for 8 Minutes until you have a smooth mixture.
  12. Spread on Cooled Cookies. Set to Dry for 4 hours.
  13. Serve and enjoy.
  14. To Store place in sealed container good for week.
