Summer Squash Pasta

  • 1 Box of Thin Spaghetti Noodles
  • 1 Small Zucchini
  • 1 Small Yellow Squash
  • ½ Cup of Butter
  • ½ Cup Parmesan Cheese
  • 3 Tbsp. Olive Oil
  • ¼ tsp. Salt
  • ¼ tsp Pepper
  • Fresh Chopped Parsley


  1. In a Large Pot add water and pinch of Salt.
  2. Bring water to boil and add the Spaghetti Noodles
  3. Cook for 10 or until done. Drain from water and set aside.
  4. In a large Frying pan add the butter and melt. 
  5. Slice the Zucchini & Yellow Squash into ¼” Slices and add to pan to Sautee.
  6. Season with Salt & Pepper. Cook for 5 Minutes and remove Squash Slices from pan.
  7. Take the Olive Oil and add to the same frying pan.
  8. Then add the Spaghetti Noodles then toss.
  9. Sprinkle Parmesan Cheese and toss.
  10. Plate and add Slices of the Cooked Squashes around the Noodles.
  11. Sprinkle with Parmesan Cheese and Parsley
  12. Serve and Enjoy.
