Homemade By: Siam Rimmer


  • 1 Box of Lasagna Noodles
  • 1 Lbs. Ground Turkey
  • 1 Small Zucchini – Sliced
  • 1 Small Yellow Squash – Sliced
  • 2 Gloves of Minced Garlic
  • 1 Small White Onion – Diced
  • 2 Fresh Tomato – Sliced
  • 3 Cups of Fresh Spinach
  • 1 Cup of White Sliced Mushrooms
  • 1 Cup of Non – Fat Cottage Cheese
  • 2 Cups of Grated Mozzarella Cheese
  • ½ Cup Parmesan Cheese
  • 1 Large Jar of Tomatoes Sauce
  • 3 Tbsp. Olive Oil
  • 1 Tsp. Salt
  • 1 Tsp. Pepper
  • Fresh Chopped Parsley


  1. Pre – Heat Oven to 375 Degrees
  2. In a Large Pot add water and pinch of Salt.
  3. Bring water to boil and add the Lasagna Noodles – Cook, then drain & set aside.
  4. In a large Frying Pan add Olive Oil, Ground Turkey, Garlic, Onion, Salt and Pepper.
  5. Good until Ground Turkey is brown then add 1 Large Jar of Tomato Sauce.
  6. Mix well and remove from heat. 
  7. Slice the Zucchini, Yellow Squash and Tomatoes.
  8. In a 13” x 10” Casserole Dish cover the bottom with a layer of cooked noodles.
  9. Then a cover a thin layer of Meat sauce on top of the Noodles.
  10. Cover the Meat Sauce with a Cup of Grated Mozzarella Cheese.
  11. Then layer the sliced of squash on the top of the cheese
  12. Then add another layer of Noodles
  13. Add another layer of Meat Sauce
  14. Add the Non – Fat Cottage Cheese on top of meat sauce
  15. Add the Slice Mushrooms then the Spinach on top of Mushrooms
  16. Add the final layer of Noodles
  17. Final Layer of Meat Sauce
  18. Add the Slice Tomatoes
  19. Final Cup of Mozzarella Cheese
  20. Sprinkle the Parmesan Cheese on the Top.
  21. Place in Oven and Cook for 45 minutes
  22. Remove set aside to cool and rest for 15 minutes
  23. Cut and Serve on Plate.
