IMG_3708These homemade Blueberry Muffins are easy to make and the kids love them.

Makes 12 muffins or 1 – 9 x 9 pan

Total Time: 45 Minutes

Ingredients

  • 2 Cups of Flour
  • 3 Tsp. Baking Powder
  • ½ Salt
  • 1 Cup Sugar
  • 1 Cup Yogurt
  • 2 Large Eggs
  • ½ Cup Canola Oil
  • 1 Tsp. Vanilla
  • 2 Cups of Fresh Blueberries
  • 1 Tbsp. Flour

Instrutions:

Warm Oven to 350 degrees.  Use a 12 cup cake pan and line with your favorite Cupcake liners or spray with Non-Stick Spray.  In a mixing bowl add your sugar, eggs, yogurt, oil, vanilla and mix well.  Then add the Flour, salt, baking powder and mix well.  In a small bowl add your blueberries and flour coat them well as this prevents them from staying in the mix evenly.  Add them to the mixture and fold them until mix.  Spoon the mixture in the muffin pan until all batter is used.  Sprinkle a little bit of sugar on each muffin.  Back for 20 Min or until clean with a knife.  Cool and Serve.
