For those left-over mashed potatoes, this is a great idea for a side dish.

• 2 Cup of Left Over Mashed Potatoes
• 1/2 Cup of Shredded Cheddar Cheese
• 2 Strips of Cooked Bacon
• 2 Tbsp. Flour
• ¼ Cup of Cooked White Onion
• Pinch of Salt
• Pinch of Pepper
• 4 Tbsp. – 8 Tbsp. of Butter
• Sour Cream
In a mixing bowl add then mash potatoes, cheddar cheese, bacon, flour, onions, salt and pepper. Combine. Take about ¼ Cup of the mixture and make a ball and place on a plate. Make all the mixture into balls. In a large frying pan add 4 Tbsp. of Butter. Take one of the potato balls and place in the pan of butter and flatten to about ½”. You can add about 4 Balls at a time. Cook until golden brown and flip and brown on the other side. Remove from the pan and rest of paper towel. If you need to add more butter you can until all the mixture is used. When they are cool enough to stack you can stack 3 cakes and top with sour cream and chives.
